I. OPENING

No food says “New York” better than the bagel.  A simple, warm, freshly made plain bagel with cream cheese makes for an easy and satisfying breakfast on the go. While Sundays are usually reserved for brunch and having a slow meal, all the other days of the week, most of us tend to eat a quick breakfast on the go. It’s one of the most popular and versatile foods that I can think of. You can top a bagel with just about anything, especially cream cheese.

II.  BAGEL BASICS

The classic varieties of bagel go like this: plain, poppy seed, sesame seed, Kosher salt, onion, garlic, everything (which includes all of the above). Then you have pumpernickel and pretzel bagels. The next level tends to be sweet kinds like cinnamon raisin and blueberry, and savory like asiago cheese.  More people are trying to cut down on carbs and that’s caused bakeries to offer different kinds of bagels made from ancient grains, potato flour and other wheat-free and gluten-free ingredients.

昔ながらのベーグルの生地の種類には次のようなものがあります。プレーン、ケシの実、ゴマ、塩(コーシャ―・ソルト)、オニオン、ガーリック、エブリシング(これらすべてが入っているもの)。それから、プンパニッケル(ライ麦)、プレッツェルがあります。さらに、甘い種類——-シナモンレーズン、ブルーベリーやチーズ風味(アジア―ゴ・チーズ)もあります。炭水化物・糖質を減らそうと意識する人が増えているのですが、そのために製パン所は古代穀物やジャガイモ粉、その他の小麦を含まない、またはグルテンフリー(小麦をはじめとした穀物のタンパク質の主成分であるグルテンを除去した)素材からなるベーグルを提供するようになっています。

Bagels cross that dividing line between sit-down meals and grab-and-go items. Even though a lot of people want less carbs, you’ll find bagels served everywhere: continental breakfasts at hotels and resorts, buffets at conferences, family gatherings, boozy brunches, outdoor carts, pick-up at chains like Panera, Dunkin’, and Starbucks, traditional bakeries, gas stations, convenience stores, and delis. We can find bagels everywhere in NYC.

ベーグルはテープルについてとる食事でもあり、移動しながらとる食事にもなっています。多くの人が、炭水化物・糖質はとりたくないと思っているのですが、ベーグルは至るところで出されています。ホテルやリゾート地のコンチネンタル(ヨーロッパ風の)朝食や会議でのビュッフェ、家族の集まり、二日酔いの日のブランチ、屋台、パネラ、ダンキン、スターバックスのようなチェーン店、昔ながらのパン屋、ガソリンスタンド、コンビニ、そして惣菜屋。ここニューヨークでは至るところで目にします。

III.  ALL BAGELS ARE NOT CREATED EQUAL. すべてのベーグルが同じように作られるわけではない

Most of the kinds of places I just mentioned don’t have real bagels. The secret ingredient to delicious bagels is time. Any decent bagel shop will slowly ferment the dough overnight. Some will swear by New York City’s tap water as the secret ingredient, or how a particular person hand-rolls the bagels.

先程挙げた場所のほとんどが本物のベーグルを出しているわけではありません。おいしいベーグルの秘密は時間です。一定水準以上のベーグル専門店では一晩かけてゆっくりと生地を発酵させます。ニューヨークの水道水がおいしさの秘密だという人もいれば、熟練した人が手でこねるのが秘訣だという人もいます。

I once had a rabbi tell me that the world’s most delicious bagels are made by his neighborhood shop where the man has such big hands, he can roll two bagels at the same time and uses just the right amount of pressure when making them.

世界で一番おいしいベーグルは近所の店で作られるものだけど、そこの店の職人はとても手が大きくて、同時に2つのベーグル生地を形づくることができ、それに必要な圧力を熟知しているとかつてあるラビから聞いたことがあります。

The other step that we all know that’s important is: Bagels need boiling.

私たちみんなが重要であると知っているもうひとつのステップは ゆでることが必要 ということです。

Nowadays most bagel companies skip the boiling and use steam-injected ovens. The result is a French bread-like texture that tastes stale and lacks chewiness.

Poaching the bagels in honey water, for about 2 minutes, gives them that shiny sweet crust when baked.

Baking the bagels in a wood burning oven for about 12 minutes gives them that perfect chewy texture.

現在ではほとんどのベーグル製造会社ではゆでることを省き、スチーム機能付きオーブンを使います。その結果フランスパンのように硬くなり、もちもちした歯ごたえがなくなるのです。はちみつを加えたお湯で2分ほどゆでると焼いたときにつやのある甘い外皮になります。薪を使うオーブンで約12分焼くと中はもちもちと歯ごたえのある食感になります。

IV.   THE ORIGINAL PURVEYOR OF BAGELS: THE JEWISH DELI

You might not have known that our most iconic breakfast food used to be found at Jewish delis all around the city.  Back in the day there used to be a Jewish deli like on every corner. Delis served Eastern European immigrants and grew in the interwar era, when the children of Jewish immigrants gained some economic traction in America and could afford sandwiches and cheesecake in theater district delis. Then the kosher deli followed Jews as they settled in the outer boroughs of the city, and they became a symbol of their continuing desire to maintain a connection to their heritage.

interwar era  第一次世界大戦終結から第二次世界大戦勃発まで。基本的には1919年から1939年までの時代である。 traction  引っ張ること   outer boroughs   ニューヨークのマンハッタン以外の行政区 —–ブロンクス、クイーンズ、ブルックリン、スタテン島 を指す。   

ニューヨークで最も有名な朝食が以前はユダヤ系のデリにあったことはあまり知られていないでしょう。かつては街のあちこちにユダヤ系のデリがありました。デリは東ヨーロッパ系の移民によって出され、第一次世界大戦と第二次世界大戦の間の時代に成長しました。この時代にはユダヤ系移民の子供たちがアメリカで経済的牽引力を持ち始め、シアターディストリクトでサンドウィッチやチーズケーキを出す余裕が生まれてきました。その後、マンハッタン以外の区に住み始めたユダヤ人がコーシャ―・デリを始め、自分たちの文化的・歴史的遺産を維持していこうという強い願いの象徴となっているのです。

Q. 始めのほうにもコーシャ―・ソルト、今度はコーシャ―・デリと出てきましたが、コーシャ-とはユダヤのという意味なのですか。クリスさん、どうなのでしょう。

Kosher is synonymous with Jewish. It is the tradition and practice of certifying food for safe consumption.  Although not all Jews keep kosher, all Jewish delis are expected to keep a kosher kitchen and offer kosher foods.

ユダヤのとだいたい同じ意味で、ユダヤ教の戒律に則った食品の安全性の認定という意味をもつのですね。

すべてのユダヤ人がコーシャーを守っているわけではないけれど、ユダヤ系のデリはすべて安心できる厨房で、安心できる食品を扱うよう求められているのですね。 もう少し質問していいですか。

デリという言葉は日本でも使ってはいますが、grocery store とは違うのでしょうか。grocery store は食料雑貨店だったと思うのですが。また、タイトルにも出てきたきたpurveyorとは?

‘Deli’ is short for ‘delicatessen’. Traditional Delis have workers who take your order. They weigh and wrap up the foods for customers. Some sections of a deli will have shelves that are self-service for packaged foods.   5 デリは注文をとったり、食べ物を測ったり、包んだりしてくれるのですね。

Delicatessens originated in Germany during the 18th century and spread to the United States in the mid-19th century. Delis typically serve foods from a specific ethnicity, like Italian, German, or Jewish (a religious-cultural-ethnic identity)

元々は18世紀にドイツで始まり、アメリカにも広まった。イタリア系、ドイツ系、ユダヤ系などがあり、その国の宗教的、文化的、民族的アイデンティティーを持つのですね。

Stores like Dean & Deluca, which started as grocery stores with deli counters, tend to label themselves as “purveyors,” which is a fancy word for “retailer.” Grocery stores are self-service and focus on food items. They often have a deli counter inside.

grocery storeの中には、デリカウンターが併設されているも多いのですね。perveyorは「小売店」という意味で、デリつき食料店であるディーン&デュユルカのようなお店が自分たちのことをおしゃれに呼んだ言葉なのですね。

Key Difference: 

A grocery store is a store that sells food, while a supermarket sells food and other items. Supermarkets are large self-service grocery stores that offer customers a variety of foods and household supplies. They typically have deli-style counters for meat, fish, and prepared hot/cold foods.  Trader Joe’s is set up as a large traditional grocery store with dry food items, canned goods and exotic foods or spices from other countries. 

Grocery stores and supermarkets are related rather than being completely different. Whole Foods, Safeway, Key Food, etc. are examples of Supermarkets.  

Grocery stores that mostly sell snack foods and sandwiches are pretty much identical to convenience stores. In parts of New York a “bodega” (Spanish term) are prevalent and they are pretty much synonymous with deli or convenience store.  ( 説明はここまでです。)

Bagels went from being a standard item you’d find at a Jewish deli or a kosher bagel shop to taking on a mainstream, non-Kosher, international life of their own. Now there are only a handful of Jewish delicatessens left in New York City. But there are thousands of bakeries, cafes, supermarkets and businesses that offer bagels on their menus.

ベーグルはユダヤ系のデリまたはコーシャ―のベーグルショップにある一般的なアイテムだったのですが、国際色あふれる主流にまでなりました。今ではニューヨークにほんの一握りのユダヤ系のデリがあるだけですが、メニューにベーグルを載せている何千ものパン屋、カフェ、スーパーマーケット、その他の場所があります。

Places on the Lower East Side like Katz’s Delicatessen who have been in business since 1888, Russ & Daughters since 1907, Barney Greengrass on the Upper West Side since 1908, are still in business. In Brooklyn there’s Essen, Frankel’s, and Jay & Lloyd’s Kosher Deli. Other famous shops have moved or changed ownership. There’s the 2nd Ave. Deli that’s not on Second Avenue anymore and Kossar’s Bialy’s that in 2013 came under new ownership. There’s only one real traditional full-scale deli left in the Bronx: Liebman’s Kosher Delicatessen in Riverdale. In 1954 when Liebman’s opened there were over 100 Jewish delis in the Bronx. And just north of the city in Yonkers you have Epstein’s. Some others were going strong and had a good run but have closed their doors. Recently, Ben’s Best Kosher Deli in Rego Park, Queens, closed its doors on June 30th, 2018 after 73 years of business.

 

Katz’s Pastrami

1888年創業のロウアーイーストサイドにあるカッツ・デリカテッセン、1907年創業のラス&ドーターズ、1908年創業のアッパーウエストサイドにあるバーニーズ・グリーングラスは今も営業しています。ブルックリンではエッセン、フランケルズ、ジェイ&ロイド・コーシャ―・デリがあります。他の有名な店は移転してしまったか、オーナーが変わったです。セカンド・アヴェニュー・デリは今はもうセカンド・アヴェニューにはありません。ブロンクスには本格的で伝統的なデリは1つしか残っていません。リバーデイルにあるリーブマンズ・コーシャ―・デリカテッセン です。リーブマンズが店を出した時には、ブロンクスに100を越えるユダヤ系のデリがありました。ヨンカーズにはエプスタインズがあります。他の店は経営はうまくいっていたのですが、閉店してしまいました。最近では2018年、6月30日に、クィーンズのレゴ・パーク地区にあったベンズ・ベスト・コーシャ―・デリが創業以来73年の歴史に幕を閉じました。

V.  AT THE DELI: GETTING A BAGEL WITH A SCHMEAR & MORE.

Nowadays, the bagel menu at most businesses lists ‘spreads’ and ‘toppings’. That’s what older New Yorkers in general and Jewish Americans in particular call a schmear; it’s Yiddish.

今ではほとんどのところでベーグルメニューにスプレッドやトッピングと出ています。年配のニューヨーカー全般, 特にユダヤ系アメリカ人はシュミアと言います。これはイデッシュ語です。

Putting a generous helping of cured salmon on our bagels with cream cheese —maybe with capers too— is  a wintertime tradition in my family. It’s amazing if you haven’t tried it.

Here’s a list of quintessential Jewish cuisine that you can find at the kosher delis I just named. Foods that if you’re in Japan, you probably have never heard of or haven’t ever experience:

–             Cured beef hotdogs

–             Rugelach

–             Egg cream

 

Even today, these are not just ethnic foods.  It’s New York food.  If you spend any time in New York, then you have got to go to a real Jewish deli at some point.

これらは単にエスニックフードでははく、ニューヨークフードです。ニューヨークで過ごす機会があれば、本物のユダヤ系デリに行ってみないといけませんね。
